Recurring Family-Friendly Instant Pot Recipes

I bought my Instant Pot three years ago, convinced it would save me time in the kitchen. The only problem was, it seemed more complicated than my slow cooker. Why were there so many different settings? Why are the recipes so confusing—quick release, slow release, sauté vs manual. For 3 years, I only hard boiled eggs and made one curry soup.

Then after Griffin was born, I got curious again. A good friend shares how much she loved her Instant Pot, so I asked her why. She shared a few recipes and promised once I started using it the right way, I would love mine too. She was right. Thanks for her helpful FaceTime chats where she explained the main settings, I am a fan. I challenged myself to learn and love it by making 1 new Instant Pot a week. Here are my family’s current favorites:

Pot Pot Roast by Damn Delicious

This is the only Pot Roast I’ve made that I liked. It wasn’t dry. It was flavorful. It was perfectly tender. I failed at every other recipe I’ve ever attempted. This one proved me wrong. This one is everything you will want from a savory and warm pot roast. Believe me. Try it.

I call this the adult “spaghetti-o’s,” which is my husband’s childhood favorite. I made this the other day and ate 5 bowls. This dish will not sit in your fridge as uneaten leftover. It’s so comfortingly delicious.

My five year old loves the sesame chicken dish from our local Chinese restaurant. This is my version of a healthier copycat. He honestly doesn’t love it as much as the original but it does the job.

You can’t go wrong with this classic lemon garlic chicken recipe. It’s so full of flavor. I love lemons too so this is probably my most favorite meal. Pair it with roast vegetables, rice or cauliflower rice.

We love Indian-inspired dishes in our home. Rice and curry are staples. This recipe is full of flavor. My little ones under 5 always finish their plates.
